The 90-Minute Cooling Rule

When cooling cooked food for storage, it MUST go from 63°C to below 8°C within 90 minutes. This is a critical control point — bacteria multiply rapidly in the danger zone. Use blast chillers, ice baths, or shallow containers to speed cooling.

Reheating Requirements

Ireland: Reheat to 70°C+

Scotland: Reheat to 82°C

Food should only be reheated once. Serve immediately after reaching temperature. Never reheat food that has already been reheated.
