What is SC2?
The SC2 form is used to monitor and record the temperatures of your refrigeration and heating equipment. This includes fridges, freezers, chill displays, and hot cabinets.
Daily temperature checks help you identify equipment problems before food spoils. They also demonstrate to Environmental Health Officers that you're maintaining safe storage conditions.
Who needs to use it?
Any food business with refrigeration or heating equipment that needs regular temperature monitoring. This includes virtually all food businesses.

What do you record?
- Equipment Name — e.g., "Walk-in Fridge", "Prep Freezer"
- Temperature Reading — the actual temperature
- Date and Time — when the check was done
- Corrective Action — if temperature was out of range
- Who checked — staff member's name or initials
Why is it important?
Food safety regulations require that refrigerated food is stored at safe temperatures. Bacteria grow rapidly in the "danger zone" between 8°C and 63°C. Daily checks help you catch problems early.
If a fridge starts failing, you might not notice until food has spoiled. Regular monitoring means you can spot a rising temperature trend and fix the equipment before any food is wasted or becomes unsafe.
If equipment is out of range, check if food is still safe. Adjust the thermostat, call for repairs if needed, and document the corrective action you took.
